Below are just some of the events happening in Donnybrook Fair this month.
Help My Style
Trish & Tom will be joining Monique in the Cookery School to demonstrate a selection of “Gastro Style” dishes. Their dishes have a distinctive style of food that is fresh simple and rustic.
Tom and Trish Hilferty are two of the most highly respected chefs working in London today, with careers which take in such legendary places as The Eagle, The Fox and currently Great Queen Street and The Anchor and Hope. They have also contributed significantly to a canon of the
more enlightened, creative and serious food writing
of our times; via columns and articles, in broadsheets
and magazines, but perhaps most impressively of all
through their highly-praised and award-winning books, such as Tom's "Just Like Mother Used to Make" and Trish's
"Gastropub Classics" and "Fish and Chips".

Award Winning Garden Guru is coming to the cookery school to encourage us to grow our own veg this year. Monique will be on hand to create wonderful dishes from our home-grown produce.

Fergus Henderson - St John Restaurant London - Nose to Tail Eating
Fergus Henderson is an English Chef who founded St John Restaurant in London. He is often noted for his use of offal and other neglected cuts of meat as a consequence of his philosophy of Nose to Tail Eating. Most of his dishes are derived from traditional British cuisine. His restaurants became the ‘hangouts’ for the young British art scene and also the unofficial London Clubhouse for gatherings of the world’s greatest Chefs. Chefs Anthony Bourdain has praised Henderson for his dishes, which optimize British food while making full use of the whole animal. St John was awarded a Michelin Star in 2009.

Denis Cotter - Vegetarian cooking with Denis Cotter
We are so happy to welcome Denis back to the cookery school to share with us his unbridled passion for vegetables. His award winning Café Paradiso in Cork city is famous for his innovative and inspirational food. Denis’s focus is on creating intensely pleasurable food based on the inherent qualities of specific vegetables.

Mary Sue Milliken - Border Grill Restaurant - Mexican Cooking at it's best
Mary Sue learned her recipes and techniques from market vendors and home cooks, from street corners in downtown Mexico City to back road family barbecues and taco stands along the beach. When she returned, she opened Border Grill and “applied the same intelligence and established a new standard for gourmet Mexican fare.

Kevin Dundon & Monique - Day 2: A day spent in the Dunbrody Vegetable Garden
A three day cookery course with Kevin Dundon & Monique. The course will be split between Dunbrody House & The Cookery School in Donnybrook. The two day course in Dunbrody includes a day in the kitchen in Dunbrody & a day in their vegetable garden. This will be a small class with limited spaces available.
